Fennel and Apple Salad

This fennel and apple salad is refreshing on a warm day. Kids like its crunchiness, and the maple syrup and apples make for a fun way to get some of the benefits of fennel, such as aiding digestion, into your diet.

Fennel and Apple Salad

Serves 8
Prep time 10 minutes
Dietary Dairy-Free, Egg-Free, Gluten-Free, Vegan, Vegetarian
Meal type Appetizers, Other Vegetables, Salads


  • 2 bulbs fennel, including stalks
  • 2 Large apples, your choice
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon sea salt


Step 1
Slice fennel stalks into small pieces. Quarter the fennel bulbs and remove core. Slice remainder into small pieces.
Step 2
Slice apples in half, then quarter each half. Remove core and slice remainder into small pieces.
Step 3
Add in remaining ingredients. Toss together, season to taste. Serve.

Soma RPM for Non-Verbal/Low-Verbal Children

The Rapid Prompting Method was developed by Soma Mukhopadhyay, and is known as Soma RPM, or just RPM.

It sounds simple enough: Teaching a child with autism to communicate through independent spelling on letter boards through a series of prompts.

Soma RPM for Non-Verbal/Low-Verbal ChildrenBut the effect is powerful: Many seemingly non-verbal or low-verbal children with autism communicate extremely well using Soma RPM.

Soma RPM recognizes that children with autism are intellectually and emotionally competent but have not been able to demonstrate this due to an imbalanced sensory system, impairment of purposeful motor movement and a lack of education.

You may discover that your child is not severely handicapped, but may in fact was just lacking the proper tools for communication.


Jane Potthast grew up with autism in her home: Her younger brother, James, was diagnosed when he was three.

James had limited verbal speech and was on a recycled, first-grade curriculum throughout his life; this changed when he saw Soma Mukhopadhyay at age 14.

Through Soma’s method, James demonstrated how intelligent he was, and communicated his thoughts and opinions. 

Jane’s family felt that they were meeting James for the first time.

He has described his years before the Rapid Prompting Method as being locked in a high tower, without hope.

Children with neurodevelopmental disorders such as autism, ADHD and Sensory Processing Disorder often experienced birth trauma.

In a 2016 study, researchers found that babies whose mothers received Pitocin, an epidural or a combination of the two were 2.77 times more likely to be on the autism spectrum.
